<title>Mas' Islamic Chinese</title>

        At the very, very center of Islamic Chinese food is a round of sesame-flecked bread, a minor flour-and-water achievement that's as thick as the Bibles smuggled into China, with three or four doughy strata hovering between crispy top and bottom planks.

The bread, which must share DNA with ancient oven-baked Middle Eastern breads, is fine on its own, but even better when it replaces rice to soak up sauce from the shredded chicken with dry bean curd or to dunk into a warm pot of lamb stew.

At Mas' Islamic Chinese restaurant in Anaheim, you'll have to wait at least 15 minutes for an order of it, but that's fine; it's the sort of food that shouldn't be made ahead of time. You can have it stuffed with green onions, or not. There's also a sweet version filled with red bean paste.

The restaurant stands in an industrial section near Fullerton, and with its indoor fountain, large chandelier hanging inside a domed ceiling, red walls and the presence of owner Jamilla Ma in white headdress, it feels as though it dropped down from the sky.

Ma owned the other Islamic Chinese restaurant in Orange County, Jamillah Garden in Tustin, which she sold two years ago. The menu is essentially the same. Plenty of familiar Chinese dishes, all prepared in the Halal way, according to Muslim dietary rules. Pork and alcohol are verboten ingredients.

There's a stronger-than-usual emphasis on lamb and tripe. She serves handmade, nicely chewy noodles. And of course, there's the bread, which doesn't appear too much in Islamic restaurants in China where it's so commonplace in homes no one orders it outside.

Other than that, though, the menu is very familiar to anybody who's ever ordered an egg roll, a pot sticker or kung pao anything. There's a very nice shredded chicken with dry bean curd that's at once mildly sweet and spicy. The hot-braised shrimp is forgettable, but the salt-and-pepper shrimp is worth fighting over, each little pink curl crispy from a coating of its two seasonings and a toss into a sizzling hot pan.

I was underwhelmed by the steamed dumplings and pot stickers (even though the dough draping both was pleasantly toothsome) and the fried calamari, which looked like onion rings, was unremarkable even if its crust was as crispy as it gets.

But the sautéed pea-pod leaves, while tasting very familiar, seemed refreshing: bright green leaves still attached to crispy stalks, flecked with garlic and glistening with a touch of sesame oil. The dry sautéed string beans were crunchy and nicely charred in spots and the eggplant with curry, practically a savory pudding, was very good.

The homemade noodles show up in both brothy dishes and chow meins. They're irregular cuts, thick and chewy in spots, more tender at different points along the strands. The lamb stew warm pot is a bracing dish, the broth tinged with anise and other ingredients in Chinese five-spice powder. Big chunks of supremely tender lamb still on the bone float about, although you must negotiate the clinging bits of white fat.

Most beef dishes are worth your time. The stir-fry leek with beef is brazen in its embrace of five-spice powder, the beef deeply red, fully cooked and supple.

Mas' is the place where you want to start with the familiar and then tiptoe over to the cold spicy beef, the cold spicy tripe and the ox tongue in brown sauce. One day, the cold jellyfish might be a weekly necessity.

        A really nice, family owned Chinese restaurant that's been in Seattle for ever.  We went last night for a quick bite on the way home.

We had Wu Tau Kau Yoch, which is Taro and Pork Belly (no, not the stomach).   It's served as a casserole and is one of my personal comfort foods.

        Islamic Chinese cooking is a rarity in Southern California, eclipsed by $1 combo plates, fried rice and a nice side of MSG. But there it is in Tustin: Jamillah Garden, an expansive, always-crowded oasis where customers speak Arabic as often as Chinese, where bread is king. Inside, photos of Mecca and bamboo paintings recall a time when 7th-century Arab traders obsessed with meat (but terrified of pork) brought the rigid-but-refreshing halal guidelines to the Chinese anything’s-edible, noodles-and-rice worldview. Chinese converts to Islam went on to concoct a culinary truce famous across Asia—hearty, greasy but nuanced grub that seems like the product of a single continent before continental drift, a time when maybe the deserts of Arabia baked beneath China’s Tien Shan Mountains. And then everything was covered in soy sauce.

A Jamillah Garden meal starts as it does in most Chinese restaurants—complimentary green tea, egg flower soup, and egg rolls sparkling with freshness. The service can be a bit forgetful, but forgive: Jamillah Garden runs in an industrial park, and nearby businesses provide a constant stream of customers throughout the day, all of whom try the patience of the restaurant’s waiters while deciding which of the 200-plus items they’ll order. Servers will brusquely recommend that you join everyone else in beginning the feast with a cold appetizer per the customs of Islamic Chinese cuisine. The chilly aperitifs cleanse the palate for the fiery entrées but are also delightful on their own. Eating a small bowl of beef tendon—like Jell-O in consistency and shrieking with garlic—is like slurping down frosty vermicelli noodles. Spicy beef is almost never on the menu, but it’s worth asking for—served in tender slices, as cold as a Big Stick, and spicy enough to incinerate an Aztec. Hot sauce turns the chewy bits of honeycomb tripe a pale red; the results are the best use of offal outside of menudo.

There are some vegetarian choices. One noteworthy offering subsumes half an eggplant in a soy-derived brown sauce that would make a French cook envious. But Jamillah Garden and its patrons come mostly for the meat. Lamb is prepared in about 15 different styles, from a spicy Hunan-style stir-fry (that becomes butter in your mouth and might be the greatest meat dish from China since won ton soup) to a hot pot as big as a beach pail steaming with salty broth and pungent, soft mutton. Sliced curry chicken seems to have come by way of an Indian restaurant on its way to the wok, a giant mass of bird tinted yellow with a thin but walloping curry. The braised shrimp’s tangerine-and-lemon tones, meanwhile, would easily be the next sweet-and-sour chicken of fast food Chinese joints if it didn’t involve such an elaborate cooking process. Any meat dish should be accompanied by hand-pulled wheat noodles, thick as your belt and almost as long; Jamillah presents the noodles in portions that guarantee leftovers for your next six meals.

Please don’t overlook the sesame bread. "It takes 15 minutes to make," the waitress will warn you. But it’ll be worth the quarter hour. It’s a sesame-speckled loaf about the size of a manhole, two inches thick and as toasty as a pizza; regulars stuff meat, rice, noodles, everything into the layers inside the bread. The many slivers of green onion give the bread a verdant, sharp taste, and after nibbling on a slice, you’ll never want to eat anything else again.

While you'll find respectable renditions of Chinese favorites like a peppery orange beef, succulent stewed pork ribs with black bean sauce and sundry steamed and fried fish, the attraction here is a wide array of wonderful crustacean specialties. Start with a bamboo steamer filled with pinky-sized deep-fried red shrimp, so sweet and fresh that you want to pop them down shells-and-all. Also exceptional are golden strips of deep-fried striped bass and giant Dungeness crabs that are steamed with seaweed then smeared with a paste of hot peppers and garlic. Last year it was Bar Shu in Soho & now the eccentrically decorated Snazz Sichuan is the latest restaurant out to show Londoners there’s more to Chinese cooking than Cantonese. Sichuan cuisine is most famous for its liberal use of chilli & peppercorns & the hot & numbing experience these induce. Pig’s ear with Sichuan chilli is slightly musky in flavour & has a satisfyingly resistant texture. Ma po dou fu is silky tofu set off by finely minced beef, & a vast pile of king prawns (typical of the huge portions) lies atop a heap of peppers & dried chillies. Meanwhile, a side order of sliced cucumber with sesame acts as a cooling agent. The insistent hit of chilli in the majority of dishes means there’s a somewhat one-dimensional quality to the cooking & there will be many who find a meal here interesting rather than enjoyable. The artist will be present.
 
Miao Xiaochun creates by use of photography and modern computer animation programs montages of European masterpieces in virtual reality, as for example "The Garden of Delight" by Hieronymus Bosch. He replaces all human figures of the original painting with a digitalized image of himself. The results are large-sized paraphrases, captivating through visual splendor and an irritating discrepancy regarding the historical paragon.


By taking over the role of all figures in the original painting, Miao is provoking a crucial question concerning the christian devouted concept of culture: Who am I, when I unite all characters in mine, good and bad? He replaces the separation into heaven and hell, unknown to Asian spiritual identity, with Yin and Yang, which complement and require each other. <title>Maybe my favorite place in all of Honolulu.</title>

        <FONT COLOR="777777">[April 22, 2005]</FONT> After my coworker got off work tonight, we headed up into the Manoa Valley, me on his bike, him jogging, to go to a graveyard with a banyan tree that he'd found and said was good for climbing.

It's a gorgeous night.  The moon's full, and everything's lit up.  We talked about life, and it was a good time.  It was worth it just for the bike ride.

And then we got to the cemetery.  it turned out to be a Chinese graveyard, up on this little hill in the middle of the valley, just high enough that you could see... everything.  Over all the houses on three sides, turning into the slopes of the hills to either side, and eventually turning into the big hotels of Waikiki in front.  It was gorgeous.  Under the full moon, especially so.

"I really like it up here," my coworker told me.  "This city is so crowded and desperate for space.  But this is a big, open area, and the only people who use it are dead."

The banyan's at the top of the hill, over a low shrine decorated with carved lions.  There are thick clumps of aerial roots hanging down from the tree, and someone's knotted one of them together, so you can climb it.  Or swing on it.  You can swing out over the shrine, over the tops of the lions, towards one of those big Chinese gateway-things whose names I don't know.  So I swung on it a lot.  My coworker and I took turns, pushing each other like we were on a swing.

When we got home, something occured to me.

"Um... I left my hoodie there."

"Shudd<i>up</i>."

"Yeah, I did.  Can I borrow your moped?"

I don't seem to be able to drive my coworker's moped without uncontrollably laughing from the shear joy of it half the time.  The last time I rode it, I was enjoying it so much that I was just sort of ignoring everything, and cut off a guy who followed me, honking and swearing, to the next streetlight, whereupon he got out of his car, clearly going to hurt me until I apologized and explained it was my first day riding it.  (This was two weeks ago.  it really shakes me up when I get in big conflicts with people, so I'm only comfortable writing about it now.)

So, I laughed joyously the whole ride up to the cemetery, which I found to be just as wonderous as when I left.  And I laughed joyously the whole ride back.

I then climbed up on the roof of the hostel, and lay on my back on the scratchy tiles, looking at the clouds and the sky and the city, listening to "Good To Be Here" by The Animators, and really being quite unbelievably overjoyed with my place in life.

I came back the next day, and found the entire place smelled sweetly of incense.

        You could drive by this mini-mall café place a thousand times without easing up on the gas. But the restaurant is home to the Shandong-style beef roll, a splendid object of desire, a massive, bronzed construction of crisp Chinese pancakes, slivers of stewed beef and a sweet, house-made bean paste that bears the same relationship to ordinary hoisin sauce that a L’Orangerie’s demi-glacé might to a slug of canned brown gravy. It is a simple composition, and yet not; ordinary street food, but raised to the transcendent level of a great carne asada taco or a Modena housewife’s very best homemade tortellini. <title>Wonderful Szechuan Food</title>

        I'm surprised this hasn't shown up on my map before.

Szechuan Bistro has amazingly good food.  Like many other restaurants we frequent, it's family owned and we sure like them a lot.

This week, Ken Thompson was down from Vancouver.  So he and Vivian and I went.

We had Gai Lan, Spicy chicken, hand shaven noodles with pork, and their monster pot stickers.
