they do some amazing chocolate with wine centres!  the shiraz and dark chocolate was my fav.  they also have a whole line of jelly type candies which are veggie friendly (using pectin, not gelatine).

        At Copia they have classes, exhibits and lots of great stuff to try.  Not to mention the beautiful gardens.  A great place to unwind or to brush up on your wine knowledge.  There is also a restaurant onsite (Julia's Kitchen) which serves good food, but in my opinion is overpriced and the servers are somewhat pretentious.  Play here, eat somewhere else! Jacques Torres is ranked among the top pastry chefs in the world. In his years at Executive Pastry Chef at Le Cirque, he elevated his craft to an art form with presentations that were always creative, often whimsical, and sometimes even architectural, making dessert the focal point of the dining experience. Now Jacques has fulfilled his own fantasy - he is a master chocolatier at his own Brooklyn based chocolate factory, Jacques Torres Chocolate.

Jacques entered the world of baking in his hometown of Bandol in the southern region of Provence at the tender age of 15. After two years as an apprentice at a small pastry shop, he completed his apprenticeship requirements and graduated first in his class. Jacques Torres, the artist/chef, was on his way.

In 1980, on a bet with a friend, Jacques approached the Michelin two-star chef Jacques Maximin at the Hotel Negresco and asked for a job. Maximin gave him an hour to return with a chef's coat. An eight-year association with the Negresco began which took him around the globe. At the Negresco, he refined the skills and nurtured an intuitive sense of confectionary artistry, which has been the cornerstone of his career.

From 1980-83, Jacques studied for the degree of Master Pastry Chef after which he taught at a local culinary school in Cannes. During this time, he honed his skills and, in 1986, was awarded the prestigious Meilleur Ouvrier de France medal, the youngest chef to earn the distinction.

The list of culinary awards and achievements grew from there including the 1986 French Championship of Desserts and a gold medal from the Japanese Pastry Chef Association. Jacques served as a consultant to Cointreau and Valrhona chocolate, participated in the rededication ceremonies of the Statue of Liberty with Presidents Mitterand and Reagan and spent culinary weeks in Tokyo, Sydney, Melbourne and Spain. In 1988, Chef Torres moved to the United States where he opened The Ritz-Carlton Rancho Mirage. Soon thereafter, Sirio Maccioni invited him to join Le Cirque where he would oversee an impressive custom-built pastry kitchen. At Le Cirque, Jacques' creations delighted guests from around the world including presidents, kings and celebrities.

In addition to his role as chocolatier and business owner, Jacques serves as Dean of Pastry Studies at New York's French Culinary Institute. He has also opened his kitchen to aspiring students and generously donated his time to many national charities including Meals on Wheels, the American Red Cross and God's Love We Deliver. Chef Torres has participated in Julia Child's Master Chef television series, Pierre Franey's Birthday Celebrations and "Merci Julia", a salute by the world's top culinary professionals to Julia Child. In recent years, he has been named the James Beard Pastry Chef of the Year, the Chef's of America Pastry Chef of the Year and one of Chocolatier Magazine's 10 Best Pastry Chefs.         I met a buddy there for lunch last Friday.  My buddy ordered the Chicago dog with everything plus "Special Sauce" and a chocolate shake.

"What's special sauce?", I asked my friend.
"I don't know, I think it's that stuff at the bottom of the hot dog cooker at the ballpark after all the hotdogs are gone" he said.
"Sounds good, I'll have what he had, but make mine a mint shake."

They went down fast and easy, with narry a drop of celery salt flavored nuclear green relish left in my little square paper bowl.

If you're in the mood for a Chicago style dawg, and you want a quick lunch, I'd recommend Walkin Dog.

<title>Szmania Restaurant:  Four Stars in the Neighborhood</title>

        Szmania is a four star restaurant in the heart of my neighborhood - Magnolia in Seattle.  It is a great restaurant with reasonable prices and a fantastic specialty drink selection.  We go there once or twice a month, so there will be a lot of entries here after a short spell.

Last night Vivian and I didn't want to cook, so we walked up to Szmania for their early happy hour.  We arrived at about 5 pm.

They have a set menu for happy hour with gets you an appetizer, main and dessert for $20.  The nice drinks are also $2 off.

I had a Zentini which is made with green tea liqueur, Vivian had a drink with an orange peel in it.  I forgot what it was.

For appetizer I had a heart of romaine salad with roquefort and pancetta.  My main was their Jagerschnitzel, which is always enjoyable.

Vivian started with the goulasch and then had the mahi mahi.

We talked through the meal about Vivian's rapidly evolving plans for becoming a chocolatier.  Earlier we had looked at temporary professional kitchen space and how things might look if she shared more permanent space with a friend who also makes chocolate.

I am tired, climbing out of the limo from the airport, and coming into the house.

<title>Update on Theo Chocolates</title>

        I had the chance to take an out of towner to Theo's Fremont shop this week. They have moved up into the old "Community Living Room" space with a shop that is open during the week. (Before it was only on Sunday's). First, GENEROUS sampling. If you want to try their bars or nibble a piece of truffle, they will help you out. It's good business as it is hard to resist buying something to take home. I tried the cardomom caramel - sublime, and bought a Whiskey and a Coffee truffle to take home to my choco-hubby, along with some of their cacao nib toffee. <title>Top Tier Chocolates at Donnelly Chocolates in Santa Cruz</title>

        On our drive down the coast we had one mandatory stop - Donnelly Chocolates.  Richard Donnelly, who turned out to be a very helpful guy, makes some pretty excellent chocolates.  Especially liquid filled ones - which are pretty hard to get right.

We picked up several, including Lemoncello and a nice Single Malt.  He doesn't skimp either, the single malt was full strength and not cheap.  I believe a nice aged Macallan.  Very smoky.  

As always, the geolocator didn't do a very good job, it's actually on the southwest corner of Mission (Hwy 1) and Bay Street.

Neighborhoods have their own unique smells, usually formed by who lives and works there. In many New York neighborhoods, there is a sharp disjuncture between the combined cultural smells of a neighborhood’s residents and the lingering industrial warehouses or the growing commercial markets. Their co-existence makes for distinct olfactory blends. What could be the smell of the co-existence of yuppie immigrants, shoe rubber, new condominium cement, shelters, steel restaurant appliances and vintage furniture in this neighborhood? What else can you find?

The South Street Seaport Fishmarket that was until recently located in Lower Manhattan, was steeped in tradition and the strong smell of fish guts. When it moved to its new, modern facility in the Bronx with efficient ventilation, the smell of fish was gone and with it the sense of tradition for many of the fish mongerers.

One Smelling Committee member described the odor of his Crown Heights neighborhood in Brooklyn as a pungent co-mingling of mangoes and piss. In the mornings, Canal Street and Broadway smells like furry wet metal coated in cold fish oil and hot bacon grease.

Over a hundred years ago, Canal St. still smelled fishy and marshy. When New York was the oyster-producing capital of the world, you could buy all-you-can-eat oysters raw or fried, for 6 cents there. Canal Street was converted from a Canal to a street in 1811. It channeled water from a fresh water lake called Collect Pond, just west of what is now Chinatown. When the lake festered and stank with disease and too many pollutants from tanneries, breweries and other industries, it was filled with dirt and turned into a landfill, on the edge of which was built the notorious Five Points slum. Canal Street was also filled and harbored the fishy smells of oyster saloons and brothels for years to come.
